Food is at the forefront of what we do, and a constant inspiration. While eating at our restaurant Wild Beer at Jessop House in Cheltenham, head brewer Brett tasted our caramelised miso butter on a burger bun and instantly started conceiving ideas to recreate the flavours in a beer. Queue a montage of caramelising miso paste in the over, making tinctures with tonka beans and several trial batches on our pilot kit!
Billionaire is a heavy, decadent beer and will compliment sweets well being able to standing up to the biggest of deserts. With a good hit of umami and salinity as well there is a lot of affinity with Asian food. Soy based dishes like terriyaki skewers compliment the umami miso notes and the malt backbone soothes any spices it could come up against.
