The beer that started the brewery, a Wild beer, an untamed beast that thrives on the unpredict- ability of wild yeast and the subtlety and com- plexity of maturation in oak. The final ingredient is the blending, after a significant period of ageing we blend red wine barrels and bourbon barrels together to produce a unique beer.
In making this beer an English old ale is aged in a combination of bourbon and burgundy red wine barrels for a minimum of 3 months. Here is sours and develops beautifully but every barrel is different. This is where blending comes in. Around 100 barrels will be tasted before being whittled down to 25 for a single blend. This means each batch is completely unrepeatable and unique, every batch has some element of difference to it.
Modus Operandi is our go-to game beer, the rich irony meant joins harmoniously with the malty back bone of the beer. Then the barrel character and tart acidity cut through the richness of the meat. Also try with roasted dishes, the maillard flavours of the dish find resonance with the malt in the beer while the fruit acidity find a counterpoint note.
