When a drink is the same shade of blue as the sky, and when its name reminds you of everyone’s favourite sunny retreat, then you know that drink is going to go perfectly with a hot summer. This creamy, sweet cocktail is based on the classic beachy themes of rum, coconut and pineapples.
Considered somewhat of a fancy drink, the “Swimming Pool” is not exactly a cocktail in the classical sense of the word, but is considered one nonetheless. This refreshing elixir was surprisingly concocted in the Munich Schumann’s Bar in 1979, and first published in 1984 by its owning bartender Charles Schumann himself.
So popular and delicious is this drink, that virgin versions have also been introduced the world over for people to enjoy its invigoratingly sweet flavours should they choose to forego the rum. Yet, the rum undoubtedly completes this famous drink by refreshing not only a heated body but also electrifying the soul to get into the spirits of summer. Depending on the barista, the Swimming Pool ranges in appearance from a uniform creamy turquoise blue akin to the waters of a swimming pool, to a creamy white with stunning blue patterns where the Blue Curacao inks the white in watercolour-like patterns. Either way, the Swimming Pool is a must-have in the hotter months, for the complete summer experience.
Here’s the recipe for Swimming Pool:
- 35 ml Vodka
- 20 ml Cream
- 20 ml Cream of coconut
- 20 ml Blue Curaçao
- 100 ml pineapple juice
- Chill a Hurricane glass with ice for 5 min, then pour ice out before adding ingredients
- Add vodka, pineapple juice, cream and cream of coconut into a blender with crushed ice
- Blend until smooth
- Pour into the Hurricane glass.
- Float the blue curacao on top so that it seeps into the drink
- Garnish with a slice of pineapple and a cherry.
- Serve with straw
