Sweet Meat Cocktail Recipe

Every once in a while, there is a mixologist who shows the world that there is a great cocktail that hasn’t been invented yet. One of the men that is well-known for doing this is one Todd Trasher of Virginia, who still calls himself a bartender, and isn’t a biggest fan of the “mixologist” title.

He is arguably the state’s most famous cocktail proponent, and one of the reasons for his status is the fact that he has created some very innovative cocktails. The Sweet Meat is one of those cocktails that truly harkens back to very Southern fruits and candies, like pecans and peaches.

Ingredients:

  • 2 ounces of bourbon
  • 1 ½ ounces of pecan water
    • 1 quart of pecan pieces
    • 2 roughly chopped peaches
    • 2 quarts of water
    • ½ quart of honey
  • 1 dash of peach bitters
  • 1 lemon twist

Preparation:

  1. How to make pecan water:
    • Spread pecans on a baking sheet and toast for 15 minutes or until oils begin to seep.
    • Boil the 2 quarts of water in a pot on a stovetop.
    • Reduce to a simmer and add the peaches and honey.
    • Add the pecan pieces to the water/honey mixture and let it infuse for 30 minutes.
    • Remove from heat.
    • After some time. Strain using a chinois and coffee filter to remove solids.
  2. In a mixing glass combine all of the subsequent ingredients with ice.
  3. Stir for 30 seconds.
  4. Strain into a cocktail glass and garnish with the lemon twist.

  • Baking sheet
  • Pot
  • Chinois
  • Coffee Filter
  • Mixing glass
  • Cocktail glass

Of course, the garnish is optional. This cocktail is particularly southern because pecans and peaches have specifically always been associated with the South. In fact, in 1919, Texas even made the pecan tree the Texas state tree officially. Similarly, Georgia is known as the “peach state”, and even holds a Peach Festival annually. The Sweet Meat cocktail is Todd Trasher’s homage to the South in many ways, and is the epitome of a modern Southern cocktail.
