The four-legged version of an Irish Bulldog is actually an extinct breed. It is said by some to have been the ancestor of the British Bulldog, but as a separate and distinct breed, the Irish Bulldog died out in the middle of the last Century.
The Irish Staffordshire Bull Terrier is alive and well, however, but it’s one of those dogs you want to be leery of. It falls into the general “pit-bull” category, and all the controversy that goes along with that.
Which is a bit odd because there’s absolutely nothing menacing about this simple little cocktail that goes along nicely with dessert. The only resemblance is that if you serve the cocktail as recommended, in an old-fashioned glass, they’re both a little on the stubby side.
The Irish Bulldog Cocktail is a variation of the “Colorado Bulldog,” a popular cocktail in the United States, which uses a coffee based liqueur instead of Irish Cream.

Be sure to let us know at liquor online if you have any other favourites that pay tribute to man’s best friend (after his cocktail shaker of course).
