Holding a spot on the International Bartenders Association list of Official Cocktails, the Casino was once a very popular drink with lovers of gin. There’s really nothing to hide the taste of the featured alcohol, so if you’re not a fan of gin, this isn’t the drink for you.
The Casino is a lot like the wildly popular Aviation, without the crème de violette to turn it that lovely shade of lavender blue.
Authentic Maraschino liqueur is made by distilling Marasca cherries which are a bit sour and grow wild along parts of the Dalmatian coast. That’s quite a different taste from the maraschino cherry you’re used to finding in the bottom of your cocktail glass, although the name comes from those used in producing the liqueur. Cocktail cherries can be sourced from a number of sweet varieties, which are bleached and then artificially coloured. If you love those little cherry garnishes, you really don’t want to know any more about how they’re made.
The drink also calls for a dash of orange bitters which gives it a hint of flavouring that accentuates rather than masks the dominant taste of the gin. Enjoy your Dry Martini alternative over a game of craps, and get that hint of special agent luck with ever sip.
Here’s the recipe for making a Casino cocktail:
- 60ml Gin
- 15ml Maraschino Liqueur
- 15ml Lemon Juice
- 1 Dash of Orange Bitters
- Maraschino cherry to garnish
- Fill a cocktail shaker with ice
- Add all ingredients
- Shake gently
- Strain into a cocktail glass
- Garnish with a maraschino cherry
